Rosemary is cultivated in temperate zones throughout Europe and Ameica. Rosemary has been grown in England since the early 9th. century. Rosemary is a food preservative and an anti-oxidant. Rosemary leaves can be tough, so they are best chopped before being added to any dish. It is an important herbal medicine.

Culinary Uses.

The flavor of Rosemary is strong and unsubtle; it is not diminished by long cooking, so use rosemary judiciously, even in slow-cooked stews. In Mediterranean cooking it is much used with vegetables ,fried in olive oil. In Italy rosemary is used in cooking veal. Whole sprigs are good in marinades, especially for lamb, and will give a smoky flavor when placed under meat or poultry being grilled or roasted.

Rosemary is good with apricots,cabbage, cream cheese, eggplant, eggs, fish, lamb, lentils, mushrooms, onions, oranges, pork, potatoes, poultry, rabbit, tomatoes, veal and winter squash. Rosemary can be used for syrup for desserts, summer drinks like lemonade.

Rosemary is an important herbal medicine and there are many ways to enjoy and consume it.
