Guar gum ice cream is ice cream made using a bit of guar gum to prevent the formation of ice crystals. The guar is added to sweetened milk and cream. It is a natural thickening agent that is also used in chilled puddings and cold pastry fillings.
Researchers think that since guar gum increases glucose tolerance, it may be helpful for diabetics to take it with their meals. Several diet pills include this product because it helps to make the stomach feel full.
Guar gum is a hydrocolloid. This family of compounds includes gum Arabic, which is used in Slim Fast. In tests done on rats, guar gum caused the level of bad LDL cholesterol in their bodies to fall by about thirty percent.
