Making Your Own Apple Cider Vinegar
- Select a large bowl/container/jar for use as a fermentation vat
- Wash and peel 2 Kg of apples. Keep peelings and the rest of the fruit separate. It is the apple peelings that are to be used in the making of the apple cider vinegar. The rest of the fruit (the flesh) can be put to other uses such as stewing the apples, use in making apple sauce or to make apple pies etc.
- With the apple peel in the container that is going to be used as the fermentation vessel add enough water to ensure that all of the apple peelings are covered
- Now cover the fermentation container and place in a warm place that is rarely disturbed (air closet for example). Leave to ferment.
- Don’t forget to regularly checkup on the apple cider vinegar’s progress from time to time. Remove (skim off) the scum that collects on the top.
- Once the fermenting apple cider mix has reached your desired strength you can begin bottling it remembering to use sterilized bottles/jars (coffee jars are ideal)
Tips
Bottling: I usually bottle ¼ of the apple cider a day for four days. In this way we can have a range of apple cider vinegars of varying strength from which to select.
Straining: I also strain some before bottling to be used as table vinegar (especially with fish, chips etc.). The reason for doing this is that it does make the final bottled apple cider vinegar more appealing to a considerably larger range of the population (especially the kids).

I have been using ACV for years. But the price on the natural stuff went up real high. So I buy a gallon at a time from my local supermarket for 2.39.00 now.
I will defineitly try this recipe.
