Health Benefits of Beetroot
Beetroot is a popular vegetable of Ukrainian diet and one of the ingredients of traditional Ukrainian soup “borsch”. This dark purple vegetable is loved by Ukrainians not only for its full-flavored taste and rich color, but also for its health benefits. Let me name just a few of them.

Beetroot juice has a unique quality – it can restore hemoglobin level, thanks to contain of iron and copper. Beetroot also contains a bunch of vitamins including vitamin P, which helps to strengthen elasticity of blood vessels and prevent sclerosis and internal hemorrhage. One of really great benefits of beetroot is ability to lower blood pressure and reduce blood cholesterol level.
Beetroot contains the bioactive agent betaine that intensifies work of liver’s cells and supports healthy liver function. When the liver is functioning properly, fats are broken down efficiently, helping weight loss, and preventing fatigue and nausea. Beetroot has considerable amount of pectic agents that protect our bodies from influence of radioactive elements and heavy metals.
You can find beetroot in the organic food section of supermarkets. The fastest and easiest way to cook beetroot is to make a beetroot salad. Here is my recipe:
1. Boil a beetroot approximately 30 minutes – it depends on the size of the vegetable. To check if it’s ready, stick a sharp knife into beetroot. If it moves smoothly, the vegetable is cooked.
2. Let the beetroot cool down and then peel its skin.
3. Grate the beetroot and a clove of garlic.
4. Salt and pepper the salad and add a table spoon of olive oil or a salad dressing.

I love beetroot especially when freshly cooked from the garden and not soaked in vinegar, which in my opinion ruins the flavour. To know it has so many health benefits too is a really useful. Well done.
